Banana Muffins

I like to add in walnuts & coconut, or chocolate chips.  Feel free to make any variations that suit your family.

Ingredients
·         220 grams all-purpose flour
·         1 tsp baking powder
·         1 tsp baking soda
·         ½ tsp salt
·         3 large ripe bananas
·         150 grams white sugar
·         1 egg
·         70 grams melted butter

Instructions

1.       Preheat oven to 350 degrees and line muffin tray with paper liners

2.       Place bananas, sugar, egg and butter in TM bowl and mix for 5 seconds, speed 5

3.       Add in flour, baking powder, baking soda, and salt and mix for 15 seconds, speed 3

4.       Pour into muffin tray and bake for 20 - 25 minutes

Variations
Substitute 70 grams of apple sauce instead of using melted butter.

After adding dry ingredients, add in 20 grams of walnuts and 20 grams of coconut, OR 60 grams chocolate chips.  Mix 10 seconds, speed 4.

Check out my video on how to make these:
